Opened in 1962 by Chuck (junior high school teacher) and Dianne (home economics major) Thompson as Edwards Pancake House, renamed to Mr. Pancake in 1964 after giving birth to their daughter Elizabeth Jane (Liz). In 1980, their daughter Liz took over the management of the restaurant until today and possibly the third generation of Thompson family are preparing to step-in and carry-on the "family's tradition of excellence." The original owner of Mr. Pancake, Charles “Chuck” Thompson passed away in 2012 from Creutzfeldt-Jakob disease, a rare degenerative neurological disorder.
