This was once the best steakhouse in the Big Bend area. Paul Nicholson, the owner of Paul's Pest Control, converted the family homestead into a restaurant largely as a hobby. Within a couple of years of opening, it had grown to more than 400 seats by physically moving historic buildings from N Florida to the site and converting them into additional dining areas. The Shady Rest, a disreputable bar from a couple of miles southwest, was moved here and used as the conference center.

Unfortunately, Paul Nicholson was killed in a freak accident in South America on a quail hunting trip when a wheel came off a passing truck and struck the car he was in. The management tried to continue running the restaurant with no changes, but unfortunately it just never seemed the same. Business eventually fell off to nearly nothing. The restaurant is now closed.
