Crossed underneath by a canal along its entire length, this building is one of the most original of the Abbey today. It reflects the control of hydraulic power that existed in the Middle Ages to the Cistercians.

The water of this channel comes from 2 rivers channeled several kilometers. This channel collects, in addition, the wastewater from the kitchen by a secondary channel and stormwater by gargoyles.

Its walls are medieval, but his overtures were widely reviewed in the classical period which saw the settlement of prior residence on the floor
