Although a relatively small market, El Mercado de Villa Coapa houses many small privately owned stands that sell anything from school supplies to menudo. My favorite commodity from El Mercado was Dona Estellita's one of a kind quesadillas. Her hot- grease-burnt hands molded the dough into a ship like quesadilla, which she dipped into a molting hot frying pan. The result was a mouth-watering crisp quesadilla, in which she would slit a crease and pour a delicious green salsa. Unfortunately, she has retired, but you could still visit one of the other many stands and taste an almost-as-good imitation of her creation.
