Built in the days before refrigeration, in a location where block ice would not be available, not even in the winter time.
Note the "double roof."
A shade roof was put in place about 10 inches (25cm) above the structural roof, so as to prevent the hot summer sun's beating down directly on it.
Note the severe structural damage to the thick limestone masonry, caused by the 1994 earthquake.
