Typical of the region, Soubès has a tiny population in winter which triples or quadruples in summer as "estivants" take up residence in their summer homes. The village has a café, the Café du Terral (ph 04.67.44.01.48), a small general store, and a Mairie (ph 04.67.44.05.79). Some wine grapes are grown but the village has never had a Cave Cooperative -- growers use the Caves of Lodève and Pégairolles. Fruit, especially peaches, grows well in the hot climate. Water was formerly plentiful, and the village has seven public fountains, but today they are all dry. There is no hotel but one small guest-house on the outskirts (google "larkfield +soubes"). Also, some houses and rooms in the village are available for short-term rental. The village festival is held over the first weekend in August, and features nightly dances and daily contests of pétanque and belotte. Sometimes yearling bulls are run through the main street as part of the festival.
