Scottsdale Community College- Their mascot is "Arti the Artichoke" dating back the college's founding in the 1970s. Students were upset about amounts of money being spent on athletic programs. When the college offered a student election to chose a new mascot, they rallied and submitted something rather silly and inappropriate- hence the "Artichoke".
Now it is a source of pride for the college, and little stuffed "Arti's" are sold in the college bookstore to raise money for student scholarships
